The mobile networks well support 3G modem capabilities over bluetooth on virtually all 3G handsets. Some also support USB.
In short, this is a moot discussion. If you have a 3G handset with a data plan, you are already all set. Buying a "modem only" device is simply a waste of money - its a way for cell phone providers to sell you a piece of junk that will become obsolete in 2 years - as thats their business model.
There's no need to throw power-consuming redundant hardware into the mix - hardware would need to support differing technologies and frequencies around the world.
And therefore, Apple doesn't have to choose one technology or provider. I'm sure once the iPhone goes 3G, Apple's handset will support the same.
